Step 1, dinner: Fast Roast Chicken + toss some veggies in there when it has about 15 more minutes to go.

Step 2, lunch: Curried Chicken Salad

I think that chicken recipe is quite possibly the best thing to make when you’re too busy to cook (active time investment, 10 minutes?)….like, for the rest of the week. And if you buy a calm, chilled out chicken that was hugged just enough as a child, it tastes better.
